Harissa-Honey Glazed Roasted Salmon

Ingredients

  • 4 1/2-pound salmon filets, skin on
  • 2 tablespoons olive oil
  • Salt
  • 1/2 cup honey
  • 2 teaspoons harissa

Directions

  1. Heat the broiler. Coat the salmon with olive oil, then sprinkle it with salt. Set the fillets on a foil-lined rimmed baking sheet and place the pan in the upper third of the oven. Broil for 10 minutes.
  2. While the salmon cooks, whisk the honey with the harissa until the glaze is smooth. When those 10 minutes are up, the surface of the fish should be starting to turn golden. Paint on most of the honey-harissa mixture, holding a little back for the finish.
  3. Return the salmon to the broiler for 5 minutes after glazing, spooning the glaze back over the fish once or twice while it cooks. Take the salmon out of the oven, pour the remaining glaze on top, and serve right away with crusty baguette or fluffy couscous.
