Ingredients

2 cups romaine lettuce, chopped

1 cucumber, diced

1 red bell pepper, diced

1/2 cup cherry tomatoes, halved

1/4 cup fresh parsley, chopped

2 tablespoons olive oil

2 tablespoons lemon juice

1 teaspoon sumac

1/2 teaspoon garlic powder

Salt and pepper to taste

2 pita breads, cut into cubes and toasted

Directions

Preheat oven to 350 degrees F . Place the cubed pita bread on a baking sheet and sprinkle with salt, pepper, garlic powder, and sumac. Bake for 10 minutes or until lightly toasted. In a small bowl, whisk together the lemon juice and olive oil. Set aside. In a large bowl, combine the parsley, tomatoes, bell pepper, cucumber, lettuce, and toasted pita cubes. Drizzle with the lemon juice mixture and toss to coat evenly. Serve immediately.
