Roasted Beet and Walnut Salad

Ingredients

4 medium beets, peeled and cut into 1/2-inch cubes

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1/2 cup walnuts, roughly chopped

3 tablespoons balsamic vinegar

2 tablespoons honey

1/4 cup extra virgin olive oil

2 tablespoons fresh lemon juice

2 cloves garlic, minced

1/4 cup crumbled feta cheese

2 tablespoons chopped fresh parsley leaves

Directions

Preheat the oven to 350º F. Wash the beets and remove the stem and root ends. Wrap each beet in aluminum foil so that the opening is at the top of the beets. Roast for 45 minutes or until a knife inserted into the center enters easily.
