Memphis-Style Championship Red Sauce

Ingredients
2 tablespoons vegetable oil
1/2 cup diced onion
1/4 cup diced celery
1/4 cup diced bell pepper
2 cloves garlic, minced
2 tablespoons tomato paste
1 can crushed tomatoes
1 can tomato paste
2 teaspoons Worcestershire sauce
2 teaspoons white vinegar
1 teaspoon sugar
1 teaspoon chili powder
1 teaspoon smoked paprika
1/2 teaspoon ground cumin
Salt and freshly ground black pepper, to taste
Directions
Combine all ingredients in a medium saucepan and then bring to a boil over medium-high heat. Reduce heat and simmer over medium-low heat for 10-15 minutes. Allow to cool, then transfer to a tightly covered jar or plastic container. Store refrigerated for up to 2 weeks.
