Ingredients

2 tablespoons olive oil

2 pounds beef chuck, cut into 1-inch cubes

Salt and freshly ground black pepper

2 large onions, chopped

4 cloves garlic, minced

2 tablespoons tomato paste

2 tablespoons all-purpose flour

1 bottle Guinness beer

3 cups beef broth

1 teaspoon dried thyme leaves

2 bay leaves

4 carrots, peeled and cut into 1/2 inch slices

4 potatoes, peeled and cut into 1/2 inch cubes

2 tablespoons chopped fresh parsley

Directions

Preheat oven to 350 degrees F . Heat the olive oil in a large Dutch oven over medium-high heat. Add the beef cubes and cook until browned on all sides, about 10 minutes. Remove the beef from the pan and set aside. Add the onions, garlic, carrots, potatoes, parsley, bay leaves, thyme, salt and pepper to the pan and cook until vegetables are softened, about 5 minutes. Stir in the flour and tomato paste until combined with the vegetables. Slowly add the beef broth and Guinness beer while stirring constantly until everything is well combined. Bring to a boil then reduce heat to low and simmer for 15 minutes or until sauce has thickened slightly. Place the beef cubes back into the pan and stir to combine with vegetables and sauce. Cover with a lid or aluminum foil and bake in preheated oven for 1 hour or until beef is tender. Serve hot with crusty bread or mashed potatoes if desired. Enjoy!.
