Ingredients
1 pound dried navy beans, soaked overnight and drained
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
1/4 cup molasses
1/4 cup brown sugar
2 tablespoons Dijon mustard
2 teaspoons dry mustard powder
1 teaspoon smoked paprika
1 teaspoon sea salt
Freshly ground black pepper, to taste
3 cups vegetable broth or water
Directions
In a medium bowl, cover beans with cold water by several inches and stir in 1 tablespoon salt. Let beans soak at least 12 hours and up to 1 day. Drain and rinse.
