Ingredients
2 tablespoons vegetable oil
1 large onion, diced
4 cloves garlic, minced
2 teaspoons fresh ginger, grated
2 teaspoons garam masala
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon turmeric powder
Salt and pepper to taste
2 pounds boneless skinless chicken thighs, cut into cubes
1 can diced tomatoes with juice
1/2 cup heavy cream or coconut milk
3 tablespoons butter, divided
Fresh cilantro leaves for garnish
Directions
Add fenugreek leaves to small skillet and place over medium heat. Toast leaves, tossing them constantly, until quite fragrant, about 30 seconds. Transfer toasted leaves to spice grinder or mortar and pestle and grind to fine powder. Set aside.
