Ingredients

• 1 boneless pork shoulder roast, skin on

• 2 tablespoons olive oil

• 2 tablespoons fresh rosemary, finely chopped

• 2 tablespoons fresh sage, finely chopped

• 2 tablespoons fresh thyme, finely chopped

• 4 cloves garlic, minced

• 1 teaspoon freshly ground black pepper

• 1 teaspoon sea salt

• ½ teaspoon red pepper flakes

Directions

In a large bowl, whisk together water, salt, and sugar until solids are dissolved. Submerge pork loin in brine. Place in refrigerator and brine for 2 hours.
