Ingredients

1 9-inch unbaked pie crust

3 large eggs

1 cup granulated sugar

2 tablespoons all-purpose flour

1/4 teaspoon salt

1/2 cup freshly squeezed Meyer lemon juice

2 tablespoons butter, melted and cooled slightly

1 teaspoon finely grated Meyer lemon zest

Directions

Adjust oven rack to middle position and preheat oven to 350 degrees F. In a large bowl, beat eggs with an electric mixer until light and creamy, about 3 minutes. Add sugar and beat another 2 minutes. Add lemon juice, cornmeal, butter, and salt and beat until well combined. Pour into prepared pie shell.
