Ingredients
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
¼ teaspoon salt
½ cup olive oil
1 cup granulated sugar
2 large eggs, at room temperature
1 teaspoon pure vanilla extract
¾ cup buttermilk, at room temperature
2/3 cup shelled pistachios, chopped and toasted
Directions
Adjust oven rack to middle position and preheat oven to 375 degrees F. Spray 9- by 5-inch loaf pan with nonstick baking spray.
