Ingredients
1 whole chicken
2 tablespoons olive oil
Salt and pepper to taste
1 onion, diced
2 cloves garlic, minced
1 teaspoon dried thyme
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
3 cups chicken broth or stock
1 cup fregola pasta
1 butternut squash, peeled and cubed
2 tablespoons balsamic vinegar
2 tablespoons honey
3 tablespoons fresh parsley, chopped
Directions
Place diced squash on a rimmed baking sheet and drizzle with enough oil to lightly coat. Season with salt and pepper. Cook alongside the chicken in a 500 degrees F oven until tender, about 15 minutes. Set aside.
