Ingredients
4 soft-shell crabs, cleaned and patted dry
1/2 cup all-purpose flour
1 teaspoon garlic powder
1 teaspoon paprika
Salt and freshly ground black pepper, to taste
2 tablespoons vegetable oil
4 hamburger buns or rolls, split and lightly toasted
Lettuce leaves
Sliced tomatoes
Tartar sauce
Directions
In a large cast iron or stainless steel skillet, preheat about 1/2 inch oil to 350 degrees F . In a medium bowl, combine 1/2 cup flour with cornstarch, 1/2 teaspoon kosher salt, 1/4 teaspoon ground black pepper, baking powder, and paprika and whisk to combine. Place remaining 1/2 cup flour in a shallow bowl.
