Ingredients

2 tablespoons olive oil

1 large onion, diced

1 green bell pepper, diced

3 cloves garlic, minced

2 teaspoons Cajun seasoning

1 teaspoon dried oregano

1 teaspoon dried thyme

1/2 teaspoon cayenne pepper

2 bay leaves

14 cups vegetable broth or water

12 cups long-grain white rice, rinsed and drained

12 cans red kidney beans, drained and rinsed

1Salt and freshly ground black pepper to taste

Directions

Place beans in a large bowl and cover with 6 cups cold water. Add 2 tablespoons kosher salt and stir until dissolved. Set aside at room temperature for 8 to 16 hours. Drain and rinse.
