Ingredients
2 tablespoons olive oil
4 pounds oxtails, cut into 3-inch pieces
Salt and freshly ground black pepper
1 large onion, diced
2 carrots, peeled and diced
2 celery stalks, diced
4 cloves garlic, minced
1/2 teaspoon dried thyme leaves
1/4 teaspoon red pepper flakes
2 cups dry red wine
2 cups beef broth or stock
2 cans diced tomatoes with juice
2 bay leaves
Directions
Preheat oven to 325 degrees . Heat large braising dish over medium high heat, drizzle with olive oil, and season oxtails with salt and pepper. When oil is shimmering add oxtails to braising dish. Sear oxtails on all sides until deep golden brown.
