Ingredients
2 lbs boneless lamb or chicken, cut into cubes
1 cup basmati rice, soaked for 30 minutes and drained
2 tablespoons vegetable oil
1 large onion, finely chopped
2 cloves garlic, minced
1 teaspoon ginger paste
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground turmeric
½ teaspoon garam masala
Salt to taste
2 cups water
¼ cup plain yogurt
2 tablespoons fresh mint leaves, chopped
2 tablespoons fresh cilantro leaves, chopped
Directions
Heat 1 tablespoon ghee in a heavy bottomed saucepan over medium heat until shimmering. Add half of the onion and cook, stirring, until brown browned, about 10 minutes. Transfer to a bowl. In a large bowl, combine yogurt, turmeric, green chillies, ginger, garlic, 1 tablespoon ground cumin, 1 tablespoon ground coriander, chilli powder, and 2 teaspoons salt. Roughly chop the onions and add to the mix. Add the lamb, mix well to coat, and refrigerate at least 2 hours and up to overnight.
