Ingredients
1 pound ziti pasta
1/4 cup extra-virgin olive oil
2 cloves garlic, minced
1 can crushed tomatoes
2 teaspoons dried oregano
Kosher salt and freshly ground black pepper
1/4 teaspoon red pepper flakes
3 cups whole milk ricotta cheese
2 large eggs, lightly beaten
2 cups grated mozzarella cheese, divided
1/4 cup grated Parmesan cheese, plus more for serving
Directions
Adjust an oven rack to the middle position and preheat the oven to 400 degrees F. Place the ziti in a large bowl and cover with hot salted water by 3 or 4 inches. Let sit at room temperature for 30 minutes, stirring it after the first 5 minutes to prevent sticking. Drain.
