Ingredients
4 large eggs
2 tablespoons butter
2 tablespoons olive oil
1/2 cup ramps, chopped
1/2 cup morels, chopped
4 slices bacon, cooked and crumbled
Salt and pepper to taste
Directions
Heat bacon along with 1 tablespoon water in a medium cast iron or stainless steel skillet over medium heat, stirring, until water evaporates, bacon fat renders, and bacon is completely crisp, about 5 minutes. Using a slotted spoon, transfer bacon to a bowl and set aside.
