Ingredients
1/2 cup pineapple juice
1/4 cup freshly squeezed lime juice
1/4 cup agave nectar
2 tablespoons chipotle puree
1/2 teaspoon ground cumin
3 cups tequila blanco or silver tequila
Ice cubes, for serving
Fresh pineapple wedges, for garnish
Directions
Slice cilantro and scallions into 3-inch segments, then add to a blender along with tomatoes, pineapple, lime juice, water, agave nectar, adobo sauce, and salt. Process until smooth. Strain through a fine-mesh strainer into a large measuring cup. .
