1 pound ground turkey

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg, lightly beaten

2 tablespoons chopped fresh parsley

2 cloves garlic, minced

1 teaspoon Worcestershire sauce

Salt and freshly ground black pepper to taste

Vegetable oil for brushing the grill rack

Directions

Preheat oven to 400 degrees F and set wrack to upper-middle position. Rub eggplant with olive oil until coated. Season with salt and pepper. Wrap with aluminum foil and set on rimmed baking sheet. Roast until completely tender, turning once, about 30 minutes. Allow to cool slightly, remove from foil, and scrape flesh away from skin. Chop flesh until fine purée is formed. There should be about 4-6 ounces of purée.
