Ingredients
1 bunch of kale, stems removed and leaves chopped into bite-sized pieces
1 can chickpeas, drained and rinsed
2 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon sumac powder
1/4 teaspoon sea salt
1/4 teaspoon black pepper
1/2 red onion, thinly sliced
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
Directions
Combine kale leaves with olive oil and 1 teaspoon salt in a large bowl. Toss until evenly coated. Allow to rest at room temperature until kale is lightly wilted, about 1 hour.
