Ingredients
2 tablespoons vegetable oil
1 large onion, diced
2 celery stalks, diced
1 green bell pepper, diced
3 cloves garlic, minced
2 teaspoons Cajun seasoning blend
1 teaspoon smoked paprika
½ teaspoon dried thyme leaves
¼ teaspoon cayenne pepper
4 cups chicken broth or stock
2 cups cooked turkey, shredded or chopped into bite sized pieces
12 ounces Andouille sausage, sliced into ½ inch thick rounds
2 bay leaves
1 cup long grain white rice, uncooked
Salt and freshly ground black pepper to taste
Directions
Heat 1 tablespoon oil in a large saute pan over medium heat. Add celery, pepper and onion and cook, stirring often, until vegetables have begun to soften, about 5 minutes. Add garlic and continue cooking for 2 minutes more.
