Ingredients
1 box jumbo pasta shells
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
1 teaspoon Italian seasoning
1/4 teaspoon red pepper flakes
2 cups ricotta cheese
2 cups shredded mozzarella cheese, divided
1/4 cup grated Parmesan cheese, plus more for topping
10 ounces frozen spinach, thawed and squeezed dry
Salt and freshly ground black pepper to taste
3 cups marinara sauce
Directions
Preheat oven to 375 degrees F. In a large pot of salted boiling water, cook shells according to package instructions for baked shells . Using a spider, slotted spoon, or mesh strainer, carefully transfer shells to a large bowl of cold water until cooled slightly, then drain. Drizzle shells very lightly with oil and toss to coat. Set aside.
