Ingredients
1/2 cup butter, melted
1/2 cup light brown sugar, packed
1 can pineapple slices in juice, drained and juice reserved
6 maraschino cherries, halved
1 box yellow cake mix
3 large eggs
1/3 cup vegetable oil
1 teaspoon vanilla extract
Directions
Adjust oven rack to middle position and preheat oven to 350 degrees F. Heat 6 tablespoons butter in 10-inch cast iron skillet over medium high heat until melted. Stir in brown sugar and cook until caramelized, about 4 minutes. Remove from heat. Lay pineapple rings in overlapping circles to cover surface of skillet. Set aside.
