Ingredients
2 tablespoons olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, peeled and diced
2 celery stalks, diced
1/2 teaspoon dried thyme
1/4 teaspoon dried oregano
Salt and freshly ground black pepper, to taste
3 cups cooked chicken, shredded or cubed
1 cup frozen peas and carrots mix
1/3 cup all purpose flour
2 cups chicken broth or stock
1/2 cup buttermilk biscuit mix
For the Topping:
4 tablespoons cold butter, cut into small cubes
2 tablespoons chopped fresh parsley leaves
Directions
Combine chicken stock, chicken parts, onion, carrots, celery, garlic, thyme, parsley, rosemary, and bay leaf in a 5-quart stainless steel pot or saucier. Cover and place over medium-high heat until stock registers about 150 degrees F on a digital thermometer.
