Ingredients

2 tablespoons olive oil

1 onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon ground coriander

1/2 teaspoon ground ginger

1/4 teaspoon cayenne pepper

2 cups cooked chickpeas

2 cups vegetable broth or water

4 cups fresh spinach leaves, roughly chopped

Salt and freshly ground black pepper to taste

Directions

Pour half of the oil into a large saucepan over medium heat. Add the spinach and a pinch of salt. Stir constantly, and cook until the leaves just wilt, about 4 minutes. Drain contents in a colander. Rinse out saucepan and dry with paper towel.
