Ingredients
1/2 pound Italian sausage, casings removed
2 tablespoons olive oil
1 large onion, diced
3 cloves garlic, minced
2 teaspoons ground cumin
1 teaspoon smoked paprika
1 cup dried lentils, rinsed and drained
4 cups chicken broth or vegetable broth
Salt and freshly ground black pepper to taste
2 bunches dandelion greens, washed and chopped
Juice of 1 lemon
Directions
In a large, straight-sided sauté pan or Dutch oven, heat oil over medium heat until shimmering. Add sausages and cook, turning occasionally, until well browned on all sides, about 3 minutes. Transfer sausages to a plate and set aside.
