Ingredients
4 pounds bone-in beef short ribs
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
1/2 cup dry red wine
1/4 cup port wine
2 cups beef broth or stock
2 tablespoons tomato paste
1 teaspoon dried thyme leaves
1 teaspoon dried oregano leaves
1/2 ounce dried porcini mushrooms, crushed
Salt and freshly ground black pepper to taste
Directions
Adjust oven rack to lower-middle position and preheat oven to 275 degrees F. Combine porcini mushrooms and water in small bowl. Place a paper towel over the surface of the liquid to keep the mushrooms submerged. Let stand until mushrooms soften, about 30 minutes.
