2 tablespoons olive oil, divided
2 halibut fillets
1/2 teaspoon kosher salt, divided
1/4 teaspoon freshly ground black pepper, divided
2 ears fresh corn, husked and kernels removed
1/4 cup diced red onion
2 tablespoons chopped fresh cilantro leaves
1 tablespoon fresh lime juice
1/2 avocado, diced
Directions
Heat 1 tablespoon of the olive oil in a 12-inch skillet over medium heat until hot. Add the corn and a pinch of salt and pepper and cook, stirring occasionally, until the corn has charred slightly, about 5 minutes.
