Ingredients
2 pounds medium shrimp, peeled and deveined
1 cup long grain white rice
2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced red bell pepper
2 cloves garlic, minced
2 teaspoons Old Bay seasoning
1 teaspoon dried thyme leaves
3 cups chicken broth
2 bay leaves
Salt and freshly ground black pepper to taste
1/4 cup chopped fresh parsley
Directions
Heat the olive oil in a large pot over medium heat. Add the onion, celery, and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook for an additional minute. Add the chicken broth, bay leaves, thyme, Old Bay seasoning, salt and pepper to taste. Bring to a boil then reduce heat to low and simmer for 10 minutes. Add the rice and stir to combine. Simmer for an additional 15 minutes or until the rice is cooked through. Add the shrimp and parsley to the pot and cook until shrimp are pink and cooked through, about 5 minutes more. Serve hot with extra Old Bay seasoning if desired!.
