Ingredients
1 lb. salt cod, soaked overnight and drained
2 cloves garlic, minced
1/4 cup olive oil
1/4 cup milk or cream
2 tablespoons lemon juice
1/4 teaspoon freshly ground black pepper
2 tablespoons chopped fresh parsley
Directions
Rinse salt cod under cold running water until any salt on its surface is washed away. Transfer to a large container and cover with fresh water. Refrigerate for 24 hours, changing the water several times during that period.
