Ingredients
2 tablespoons olive oil
2 pounds small red potatoes, cut into 1/2-inch cubes
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
Salt and freshly ground black pepper, to taste
For the Buttermilk Herb Sauce:
3/4 cup buttermilk
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh chives
2 tablespoons chopped fresh dill leaves
Directions
In a medium bowl, stir together sour cream, buttermilk, vinegar, garlic, and two-thirds each of the dill, chives, and parsley. Season with salt and pepper. Cover and refrigerate until ready to use.
