Ingredients
1 lb boneless, skinless chicken breasts, cut into cubes
1/2 cup raw cashews
1 onion, diced
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper
1 can diced tomatoes
3 tablespoons tomato paste
2 cups chicken broth
Salt and pepper to taste
For the Cilantro Sauce:
3/4 cup plain Greek yogurt
3 tablespoons freshly chopped cilantro leaves
Juice of 1 lime
Directions
Add the cashews, chopped red onion, and cilantro to a blender. Pour in 1/2 cup of water. Blend into it is a smooth puree.
