2 ½ cups sweetened shredded coconut
¼ cup all-purpose flour
¼ teaspoon salt
4 large egg whites, at room temperature
¾ cup granulated sugar
1 teaspoon pure vanilla extract
8 ounces semi-sweet chocolate chips
2 tablespoons vegetable oil
Directions
Adjust oven rack to center position and preheat oven to 325 degrees F. Spread coconut out on a baking sheet and toast until lightly golden, stirring occasionally, about 12 minutes. Alternatively, place coconut in a single layer on a microwave-safe plate and microwave at 30-second intervals until lightly golden, about 2 minutes total. Let cool completely.
