Ingredients
1 pound smoked sausage, cut into 1/2-inch slices
2 tablespoons olive oil
1 large onion, chopped
2 cloves garlic, minced
2 cans cannellini beans, rinsed and drained
1 can diced tomatoes with juice
1 teaspoon dried thyme leaves
1/4 teaspoon pepper
2 cups chicken broth
2 tablespoons chopped fresh parsley
Directions
Preheat the oven to 475 degrees F. Preheat a sauté pan over medium heat. Add 1 tablespoon olive oil and the sausages. Brown the sausages thoroughly on both sides.
