Ingredients
4 large eggs
2 tablespoons olive oil
1/2 cup diced onion
1/2 cup diced bell pepper
1 jalapeno, seeded and minced
2 cloves garlic, minced
1/2 teaspoon ground cumin
Salt and freshly ground black pepper, to taste
2 cups crushed tortilla chips or strips
1/4 cup chopped fresh cilantro leaves
1/4 cup canned diced green chilies, drained
2 tablespoons butter or margarine, melted
Directions
In a large bowl, whisk eggs with 2 generous pinches of salt and set aside. In a medium bowl, toss tomato with a generous pinch of salt, then transfer tomatoes to a strainer and set over bowl to drain.
