Rye Pancakes With Apple-Maple Compote Recipe

Ingredients
1 cup all-purpose flour
1/2 cup rye flour
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons sugar
1 large egg, lightly beaten
1 1/4 cups buttermilk
3 tablespoons melted butter, plus more for cooking pancakes
For the Apple Maple Compote:
2 apples, peeled and diced into small cubes
2 tablespoons butter
3 tablespoons maple syrup
Directions
Melt butter in a small saucepan over medium heat. Add diced apple and cook until tender, stirring occasionally, about 6 minutes. Take off heat, stir in maple syrup and cinnamon, cover and set aside.
