Ingredients

6 large eggs

2 tablespoons milk

Salt and freshly ground black pepper, to taste

2 tablespoons olive oil

1/2 cup diced onion

1/2 cup diced bell pepper

4 cups baby spinach leaves, roughly chopped

4 slices bacon, cooked and crumbled

8 small flour tortillas, warmed

Shredded cheese, for topping

Directions

Cook bacon in a medium non-stick skillet over medium heat, stirring occasionally, until crisp, about 10 minutes. Transfer to a paper towel-lined plate with a slotted spoon, leaving fat behind.
