Ingredients
2 tablespoons olive oil
1 large onion, diced
2 cloves garlic, minced
2 pounds parsnips, peeled and diced
4 cups vegetable broth
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground ginger
Salt and pepper to taste
1/4 cup heavy cream
Directions
In a Dutch oven, heat oil over medium-high heat until shimmering. Add coriander seed and cook until fragrant, about 30 seconds. Add onion, celery, leek, garlic, jalapeño, and ginger, and cook, stirring occasionally, until softened, about 10 minutes.
