Ingredients
1 tablespoon olive oil
1/2 cup diced onion
3 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/4 teaspoon ground coriander
1/4 teaspoon red pepper flakes
2 tablespoons tomato paste
3/4 cup cooked lentils or canned black beans, drained and rinsed
3/4 cup cooked quinoa or bulgur wheat
2 tablespoons nutritional yeast
Salt and freshly ground black pepper to taste
Directions
Line a large plate with a double layer of paper towels. Place tofu on top in a single layer and transfer to freezer. Freeze for 15 minutes, then remove and let thaw while you prepare the other ingredients.
