1/4 cup soy sauce
2 tablespoons white vinegar
4 cloves garlic, minced
1 teaspoon freshly ground black pepper
2 bay leaves
1/2 teaspoon sugar
2 pounds chicken thighs or drumsticks, skin removed
1/2 cup water
2 tablespoons vegetable oil
3 tablespoons chopped fresh parsley
Directions
In a heavy-bottomed pot or Dutch oven, heat oil over medium heat until shimmering. Blot chicken dry with paper towels, then season lightly all over with salt.
