Ingredients
2 lbs pork cheeks
1/4 cup Shaoxing wine
2 tablespoons light soy sauce
2 tablespoons dark soy sauce
2 tablespoons Sichuan peppercorns, lightly crushed
4 cloves garlic, minced
1 teaspoon freshly grated ginger
1 teaspoon sugar
1/2 teaspoon five spice powder
1/4 cup vegetable oil
3 scallions, cut into 3 inch pieces
2 star anise pods
2 dried red chilies, broken in half
1 cinnamon stick
4 cups chicken stock
Directions
In the skillet, heat oil over medium heat. Make sure pork cheeks are dry and sprinkle them with salt and pepper. Add them to the pan, taking care not to crowd the meat. Cook until the surface is browned on both sides, about 4 minutes per side, flipping only once or twice so as not to disturb browning. Remove with tongs as cheeks are browned; set aside.
