Ingredients
2 tablespoons butter
1/2 cup diced onion
2 cloves garlic, minced
1/4 cup all-purpose flour
2 cups whole milk
1 teaspoon dry mustard powder
1/2 teaspoon freshly ground black pepper
8 ounces elbow macaroni, cooked according to package directions and drained
8 ounces sharp cheddar cheese, grated
4 ounces Gruyere cheese, grated
Salt to taste
Directions
Melt half the butter in a medium pan over medium heat and add the onions and a four-fingered pinch of salt. Cook, stirring until the onions is nicely caramelized.
