Ingredients
2 tablespoons olive oil
1 large onion, diced
4 cloves garlic, minced
2 jalapeños, seeded and diced
2 tablespoons ground cumin
1 teaspoon dried oregano
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cloves
3 cups chicken broth or vegetable broth
2 pounds tomatillos, husked and rinsed
1/2 cup fresh cilantro leaves, chopped
2 tablespoons freshly squeezed lime juice
Salt and freshly ground black pepper to taste
Directions
In a medium cast iron skillet over medium-high heat, toast pepitas until they start to pop and turn a light golden brown, about 5 minutes. Transfer to a spice grinder or blender and process until finely ground.
