Ingredients
1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
2 tablespoons vegetable oil
2 tablespoons minced fresh ginger
3 cloves garlic, minced
4 scallions, thinly sliced
1/4 cup low sodium soy sauce
1 tablespoon sesame oil
1 teaspoon sugar
Salt and freshly ground black pepper to taste
Directions
Place the sliced chicken in a large bowl and add salt, sugar, ground white pepper, Shaoxing wine, soy sauce, 1 teaspoon oil, and cornstarch. Mix well and marinate for 30 minutes in the refrigerator.
