Ingredients
1 cup quinoa, rinsed and drained
2 tablespoons olive oil
1 onion, diced
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon turmeric powder
1/4 teaspoon cayenne pepper
2 cups vegetable broth or water
1 can diced tomatoes with juice
2 cups broccoli florets
2 cups kale leaves, chopped
Salt and pepper to taste
Fresh cilantro for garnish
Directions
Heat the 1 1⁄2 tablespoons oil in a large pot over medium-high heat until shimmering. Add the broccoli and cauliflower and a pinch of salt and pepper. Cook, stirring until lightly browned and just tender, 4 to 5 minutes. Remove from the pot and set aside.
