Moroccan Merguez Ragout with Poached Eggs

Ingredients

1 tablespoon olive oil

1/2 teaspoon ground cumin

1/2 teaspoon ground coriander

1/4 teaspoon ground cinnamon

1/4 teaspoon cayenne pepper

3 cloves garlic, minced

1 small onion, diced

2 tablespoons tomato paste

1 can diced tomatoes with juice

2 cups vegetable broth or chicken broth

8 ounces merguez sausage, sliced into 1/4 inch thick rounds

Salt and freshly ground black pepper to taste

4 large eggs

Chopped fresh parsley for garnish

Directions

Heat the olive oil in a large frying pan over medium heat. Add the onion and sauté until golden. Toss in the garlic and cook another 2 minutes. Add the merguez and sauté until almost cooked through, about 3 minutes.
