Easy Low Carb Cauliflower Soufflé

Ingredients
1 head of cauliflower, cut into florets
2 tablespoons olive oil
3 cloves garlic, minced
1/4 cup grated Parmesan cheese
1/4 teaspoon dried oregano
Salt and pepper to taste
2 large eggs, lightly beaten
1/4 cup shredded mozzarella cheese
Directions
Preheat oven to 375 degrees F . Grease a 9-inch baking dish with cooking spray. In a large bowl, combine mozzarella cheese, eggs, salt and pepper, oregano, Parmesan cheese, garlic and olive oil. Mix until ingredients are well blended. Add cauliflower florets to the mixture and stir until evenly coated. Pour into prepared baking dish. Bake in preheated oven for 25 minutes or until golden brown and bubbly on top. Serve warm. Enjoy!.
