Ingredients
2 whole branzino, gutted and scaled
2 tablespoons olive oil
1 lemon, sliced into thin rounds
2 cloves garlic, minced
1 teaspoon dried oregano
Salt and freshly ground black pepper to taste
2 tablespoons butter
1/4 cup white wine or chicken broth
Chopped fresh parsley for garnish
Directions
Preheat oven to 375 degrees F . Heat olive oil in a large oven-safe skillet over medium-high heat. Season branzino with salt and pepper, then place in the skillet skin side down. Cook for 3 minutes, or until golden brown. Flip and cook for an additional 2 minutes. Add garlic, oregano, lemon slices, butter, and white wine or chicken broth to the skillet. Bring to a simmer and cook for 1 minute more. Transfer skillet to preheated oven and roast for 10 minutes, or until fish is cooked through and flaky. Garnish with chopped fresh parsley before serving. Enjoy!.
