Ingredients

1 package cream cheese, softened

1/4 cup granulated sugar

1/2 teaspoon vanilla extract

1 egg

1/4 cup canned pumpkin puree

1/4 teaspoon ground cinnamon

1/8 teaspoon ground nutmeg

2 tablespoons all-purpose flour

12 mini graham cracker crusts

Directions

Preheat oven to 350 degrees F . In a small bowl, mix together the flour, nutmeg, and cinnamon; set aside. In a medium bowl, beat together the pumpkin puree, egg, vanilla extract, and sugar until well blended. In a large bowl, beat the cream cheese until smooth. Gradually add in the pumpkin mixture and mix until combined. Add in the flour mixture and mix until just blended. Divide the cheesecake batter evenly among the 12 mini graham cracker crusts. Place on a baking sheet and bake for 15 minutes or until set. Allow to cool before serving. Enjoy!.
