Beef Tamale Pie With Cornmeal Crust Recipe

Ingredients

1 pound ground beef

1 onion, chopped

1 green bell pepper, chopped

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon ground cumin

Salt and freshly ground black pepper to taste

1 can diced tomatoes with juice

1 can diced green chilies, drained

3/4 cup cornmeal

3/4 cup all purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

3 tablespoons vegetable oil or melted butter, divided use

3/4 cup milk

Directions

Preheat oven to 375 degrees F . Grease a 9-inch pie plate. In a medium bowl, whisk together the milk, 2 tablespoons vegetable oil or melted butter, salt, baking powder, flour and cornmeal until smooth. Spread the mixture evenly in the prepared pie plate. Bake for 15 minutes. Meanwhile, heat the remaining 1 tablespoon of oil or butter in a large skillet over medium heat. Add the chilies, tomatoes with juice, salt and pepper to taste, cumin, chili powder and garlic; cook for 5 minutes. Add the bell pepper and onion; cook for 5 minutes more. Add the ground beef; cook until no longer pink. Drain off any excess fat from the pan if necessary. Stir in the black beans; cook for 2 minutes more. Spoon into the crust in the pie plate. Bake for 25 minutes or until golden brown on top and bubbly around edges of crust. Let cool slightly before serving warm.
